Beets can be red or golden or even striped. They are delicious when roasted and served with a dash of salt and pepper. They can be cubed into salads, pickled with sugar, vinegar and red onions, or sliced with a drizzle of olive oil and a sprinkle of goat or feta cheese. If the earthy taste is a little too much to handle, blend them into a smoothie with your favorite fruits and veggies.
