It’s a culmination of the love one man has for the meals he’s grown up with mixed with a little Jax swagger along the way. Whether it’s his etouffee, boudin balls, or his gumbo, Anthony Locke brings NOLA flavor to the Bold City.

I wanted something hearty to warm my bones. After going to New Orleans and even Venice, Louisiana, a few times I knew what would hit the spot with me. I went for the gumbo, hoping the owner’s dark roux would be sufficient to satisfy my cravings. Locke didn’t disappoint, loading the gumbo down with chicken, homemade andouille sausage, vegetables, rice, and a dark roux he learned at the feet of some of the best cooks in Cajun country.

Since I visited, Locke has expanded the menu to include fresh seafood, red beans & rice, and everything he can do under the sun to make Cajun Cravins’ 2 Go a food truck with as wide a menu as any out there.
